Ingredients:
For the Swordfish:
- 4 swordfish steaks (6 oz each)
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- Lemon wedges, for serving
For the Lemon Herb Butter:
- 4 tbsp unsalted butter, softened
- 1 garlic clove, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
For the Mediterranean Salsa:
- 1 cup cherry tomatoes, diced
- ½ cup cucumber, diced
- ¼ cup Kalamata olives, pitted and chopped
- ¼ cup red onion, finely diced
- 2 tbsp capers, drained
- 2 tbsp fresh parsley, chopped
- 1 tbsp red wine vinegar
- 2 tbsp extra-virgin olive oil
- Salt and pepper to taste
Instructions:
1. Prepare the Swordfish:
- Pat the swordfish steaks dry with a paper towel.
- Drizzle olive oil over the fish and season generously with salt and pepper.
- Preheat your grill to medium-high heat (about 400°F). Oil the grates lightly to prevent sticking.
2. Make the Lemon Herb Butter:
- In a small bowl, mix the softened butter, minced garlic, lemon juice, lemon zest, parsley, and basil. Season with salt and pepper.
- Transfer the butter mixture to a sheet of plastic wrap, form it into a log, and refrigerate until firm.
3. Make the Mediterranean Salsa:
- In a medium bowl, combine the cherry tomatoes, cucumber, olives, red onion, capers, and parsley.
